Flake ice for field heat and display
Produce needs ice for two jobs — pulling field heat out of freshly picked stock, and keeping a display looking fresh through the trading day. Both want flake, because it moulds around irregular shapes and has no sharp edges to mark soft product.
What suits produce
- Flake – the only sensible choice for contact cooling and display. Enormous cold surface area, and nothing sharp to bruise stock.
- Sub-zero flake – for transport and longer holds. It comes out dry, so it doesn’t clump and adds less water to the product.
- Allow roughly 1 kg of ice per 1 to 1.5 kg of produce for contact cooling, and about 0.5 kg per litre of display bed each day.
One for compliance. Ice used to cool the outside of product can’t then be used as food or in drinks, so it’s worth keeping display ice separate from anything going into a glass.
